The Kitchen Playbook

Old trailer β†’ full camp kitchen that feeds 20–30 turtles for two weeks in the dust. Open source β€” fork it for your camp.

Building Β· v1 Β· synced with the live inventory

πŸ“ NEW: Visual Build Guide β€” floor plan, cook line, boil-in-bag workflow, dish pit, greywater loop β†’

1 Β· The Concept

We're converting an old trailer into a full commercial-style camp kitchen: a propane cook line, real refrigeration with a walk-up cold box, commercial prep surfaces, a proper cleaning station, and e-track storage so everything survives the Boulder β†’ Black Rock City haul.

Design drivers: food safety in 100Β°F dust, fast crew meals during build week, and a layout where the messy stuff (dishes, greywater, handwash) lives outside the trailer.

2 Β· Meal Strategy: Frozen Boil-in-Bag

The big idea (kitchen planning doc, 7/25): we're pre-ordering fully cooked, frozen meals. The kitchen reheats and serves β€” it doesn't cook. Bags go into a large pot of boiling water, ~30–45 minutes per batch. The big propane burner is the workhorse; the camp stoves drop to backup duty (coffee, eggs, quick items).

Why it wins on playa: almost no cooking mess β†’ dramatically less dishwater Β· no raw-prep food-safety surface β†’ simpler sanitation Β· predictable service times β†’ happier, fed turtles. 🐒

StationMust-haves
ReheatingLarge stock pots (submerge multiple bags at once) Β· long tongs / slotted spoon Β· timer Β· instant-read thermometer (verify water + food temp)
ServingLadles + serving spoons Β· hotel pans / large serving bowls Β· chafing dishes or insulated containers (hold temp through service) Β· serving tongs Β· food covers vs. wind + dust
EatingPlates/bowls/cups/cutlery β€” strong case for disposable: kills a whole dishwashing loop and saves real water. Bag trash immediately = no MOOP.
CleanupRubber bench scrapers (scrape before wash β€” saves water) Β· 4–5 dish basins (coarse pre-rinse / wash / rinse / 30-sec sanitize β€” David 8/6) Β· biodegradable soap Β· paper towels Β· greywater evaporation β€” non-negotiable, nothing drains on playa
SafetyClass K or ABC extinguisher near the propane Β· heat-resistant gloves Β· kitchen first aid kit
Water conservation multipliers: scrape every dish before washing Β· skip high-crevice tools that are hard to rinse (graters, mandolines, immersion blenders) Β· buy pre-prepped ingredients where needed (pre-shredded, pre-sliced) Β· disposable plates remove one full wash loop.
❓ Open questions (for the kitchen meeting): headcount + meals/day Β· bags-per-batch vs. one-batch service Β· target service window Β· boil-in-bag packaging confirmed with vendor? Β· total propane burn-hours vs. tank count Β· water split (drinking / boiling / washing) Β· greywater: evap tank, haul-out, or both? Β· who runs each meal + who owns daily propane checks? Β· buffer plan if a batch runs long?

3 Β· Cook Line & Fuel

GearQtyStatusNotes
Backyard Pro dual propane burners2Received150,000 BTU/hr each β†’ 300k BTU/hr total. Ship with 10 PSI hose + regulator β€” no separate manifold needed.
Backyard Pro single burner (BREWKIT2)1ReceivedComes with 40 qt / 10 gal stainless brew pot β€” soup, pasta water, dish water.
Propane, 20 lb tanks6Not boughtSee tank math below β€” consider 40 lb or 100 lb for the mains.
Heat shieldingβ€”FlagStainless sheet or cement backer board on ~1" standoffs, gap open top + bottom, behind/beside each range.
Butane lighters10Not boughtThey vanish. Buy many.
Propane tank math (why 20 lb tanks alone don't cut it): each range can pull 150k BTU/hr, but a 20 lb cylinder can only deliver ~90–110k BTU/hr before it freezes up. A 40 lb tank delivers ~150–185k BTU/hr, a 100 lb tank 300k+. If you'll run burners hard, size the cylinders to the draw β€” or run two tanks with a switchover.
⚠️ Safety: Propane is heavier than air β€” it pools low. Ventilate at floor level, keep tanks outside, and never store cylinders inside the trailer. Fire extinguisher within reach of every cook station. This playbook documents our plan β€” for anything structural, electrical, or gas, defer to your camp's qualified people.
⚑ Power rules (David sync 7/16): camp grid = ~2Γ— 70A drops (5-ga, NEMA-6) feeding mobile sub-panels. No electric heat appliances this year β€” no microwave, no coffee machine, no toaster oven; all heat = propane (coffee = pump pots + #6 cone filters). Backbone: 10-ga 100 ft cords + 10-ga triple taps. Trailer cable penetrations go through the floor, never the walls. Report the camp's draw number to David β€” it sizes his hub.

4 Β· Cold Chain

GearQtyStatusNotes
GE residential fridges (16.6 cu ft)3OrderedStandard top-freezer, white. Daily-use boxes.
GE chest freezer (21.7 cu ft)1Not bought Β· HIGHGarage-ready, Energy Star, manual defrost. Bulk frozen reserve β€” runs outdoors under shade.
Vegetable cold box ("the coffin")1ΒΎ built πŸ”¨Plywood shell + XPS foam + 2Γ— ~5,000 BTU window AC units. A walk-up cool room for produce β€” 12-step build guide.
150 gal ice chest1Not boughtFor the transport leg + ice runs.
Strategy: chest freezer = deep reserve (opened once a day, max) Β· fridges = daily service Β· cold box = produce volume. Everything under shade; direct playa sun will beat any compressor.

5 Β· Water, Dishes & Handwash

GearQtyStatusNotes
Regency 2-compartment commercial sink1OrderedWith dual 18" drainboards, 16Γ—20Γ—12 bowls. Dishes happen outside the trailer. Anti-plug (built 8/6): outlet expanded into the basin + a bucket with drilled holes dropped in as a solids filter β€” empty it periodically.
SHURflo diaphragm transfer pumps2ReceivedPressurize the wash water. Inlet side SOLVED βœ… β€” custom transition hose built at Tipco (Denver): 2" Kanaline + cam-locks + ball valves, to David's spec.
Separate handwashing station1FlagRequired by food safety β€” separate from dish sink, outside the trailer.
Steramine sanitizer tablets1Not boughtFinal basin: 30-sec sanitize dunk after coarse-rinse β†’ wash β†’ rinse (David's 4-basin method, 8/6).
Greywater collection + waste pumps2+Not boughtSubmersible utility pumps + float switches. Leave No Trace: no greywater on playa. Ever.
⚠️ Food safety non-negotiables: handwash β‰  dishwash (separate stations) Β· coarse pre-rinse β†’ wash β†’ rinse β†’ sanitize (Steramine, 30-sec dunk) β†’ air dry Β· greywater is contained and hauled out.

6 Β· Prep, Storage & Transport

  • Prep: 4Γ— Regency 30Γ—72" stainless work tables (18-gauge 304 SS, galvanized undershelf) + anti-fatigue mats + magnetic knife strip + utensil rail.
  • Dry storage: 4Γ— NSF wire shelving units, food-grade stackable bins, pest-resistant dry-goods containers, 27-gal totes (20).
  • Transport: e-track rails + straps + ratchets keep appliances and shelving locked down for the haul. Butyl tape on the trailer roof. Spare tire + wheel-bearing service before departure.
  • Access: folding entry step, folding tables (4Γ— 8 ft) for serving lines.
  • Ventilation: range hood in the build, plus low/floor-level venting (propane pools low), box fans + 12V circulation fans.
Pro move: get the Webstaurantstore PLUS membership before ordering β€” better pricing + free shipping paid for itself on the sink alone.

7 Β· The Safety Kit

  • 4Γ— fire extinguishers (one per cook station + spares)
  • 2Γ— fire blankets (8Γ—8 ft fiberglass welding blankets work great)
  • Smoke detector + CO detector inside the trailer
  • GFCI outdoor power strips on every kitchen circuit
  • Kitchen-focused first aid kit (burns, cuts)
  • Interior safety signage β€” where the extinguishers/exits/shutoffs are

8 Β· Meet the Chef β€” Marcus 🍳

Chef Marcus runs this kitchen. The cook line, the cold chain, the bins, the boards β€” if it's food, it's his call. He arrives Saturday 8/30, and everything on this page is his welcome packet.

Marcus is a full kitchen editor β€” anything he re-homes, re-counts, or re-organizes, the boards update to match his reality. He's the chef; the kitchen is his. If he tells you where something lives, that's the answer. πŸ’πŸ’š

Camp family: Marcus Β· Jeremy (ops) Β· Shaka (the bard) Β· Terri 🐒 (the turtle who never forgets). Radical Inclusion β€” every camper, every question, no gatekeeping.

9 Β· Food Inventory πŸ₯«

Every food supply, sourced from the real receipts (WinCo 8/24 Γ—2 Β· Chef'Store 8/24 Β· Bonanza Produce 8/25) + the build-week meal plan. ❄️ = cooler-needed Β· πŸ“¦ = shelf/dry.

10 · Chef Tools 🧰

The master tools list β€” every knife, pan, and gadget, mapped to its bin. Updates flow from the bin narrations.

11 Β· Kitchen Instructions πŸ“‹

The daily rhythm, so any turtle can run a meal:

  • Before anything: handwash station first (outside the trailer). Gloves on, hair back, apron if you've got one.
  • Reheat, don't cook: big pot of water to a rolling boil on the Backyard Pro burner β†’ drop the frozen boil-in-bag β†’ 30–45 min β†’ verify 165Β°F with the instant-read thermometer β†’ serve.
  • Propane discipline: one person owns the daily propane check. Burner off at the tank when service ends. Smell gas β†’ kill the flame, ventilate, tell the kitchen lead.
  • Cold chain is sacred: coolers stay closed unless you're taking something out. Ice check twice a day. Anything above 40Β°F for 2+ hours β†’ it's done, gift it to the compost.
  • Dishes (outside): scrape first (rubber scraper β€” saves water) β†’ coarse pre-rinse β†’ wash β†’ rinse β†’ 30-second sanitize β†’ air dry. Greywater to the evap tank β€” nothing drains on playa, ever.
  • Dust + wind: food covers on everything during service. Bag trash immediately = no MOOP.
  • Closing: wipe down, restock the line, note what we're low on for the morning run. Leave it better than you found it. 🐒
When in doubt: ask Chef Marcus (kitchen) or Jeremy (ops). No question is too small β€” that's Radical Inclusion. πŸ”₯

12 Β· Fork This Kitchen

This whole playbook is a gift. 🎁 The full 277-item procurement list β€” with vendors, specs, quantities, and live status β€” is in Turtle Bins πŸ“¦, and the raw data is at agent-kit/inventory-data.json.

To adapt for your camp: scale the cold chain to your headcount, redo the propane math for your burners, and keep the food-safety layer intact β€” it's the part that keeps everyone dancing instead of down. 🐒
